Fruit and Nut Granola

I like to call this my yogurt’s companion; however, you’re sure to enjoy it with dairy milk, non-dairy milks, or dry.

Course: Breakfast, Snack
Cuisine: American
Keyword: Dry fruit, Fruit, granola, nuts, Oats
Servings: 9 Cups

Equipment

  • 1 Baking sheet

Ingredients

  • 3 cups rolled oats
  • 1 cup shredded coconut
  • 1 cup chopped walnuts
  • 1 cup sliced almonds
  • ½ cup sunflower seeds
  • ¼ cup brown sugar
  • ¼ teaspoon cinnamon
  • ¼ cup coconut oil
  • ¼ cup honey
  • 2 cups dried fruit: cherries, apricots, mango, strawberries, etc., or a combination

Instructions

  • Preheat oven to 250℉.
  • In a large bowl, combine oats, coconut, nuts, and seeds.
  • In another bowl, mix honey, brown sugar, cinnamon, and coconut oil. I find it easier to mix the coconut oil after I heat it in the microwave for about 15 seconds.
  • Pour the mixture over the dry ingredients and mix thoroughly.
  • Spread the mix on the baking sheet and bake for 1 hour. Stir every 15 minutes.
  • Take out of the oven and let the granola cool. After it is cooled, mix in the dry fruit.

Notes

Store in a sealed container, such as a mason jar. This shelf stable food can be stored at room temperature for a couple weeks, if you don’t finish it before then.
Substitute molasses for the honey for a richer flavor.
Add some flax seed or other seeds you favor.
