Orange Glazed Strawberry Tart

Use fresh picked strawberries. We chose the best looking strawberries from our harvest for this one and use the lesser looking berries for strawberry jam or strawberry sauce.

This works well with the basic tart shell recipe.

Orange Glazed Strawberry Tart

A great use for the best berries from your harvest.

Ingredients

  • 1 tart pastry dough for a 9 inch pie/tart
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 teaspoon table salt
  • 3/4 cup orange juice
  • 1 tablespoon lemon juice
  • 1 quart strawberries washed, hulled, and sliced (in halves or quarters depending on size)

Instructions

Bake the tart shell

  • Preheat your oven to 425 ºF.
  • Roll the dough our and press it into the pie pan.
  • Prick the bottom of the dough with a fork.
  • Bake unfilled for 10 or 12 minutes.

Prepare the filling

  • Using a medium saucepan, mix the sugar, cornstarch, salt, orange juice, and lemon juice together.
  • Cook over low heat and stir constantly until the mixture starts to thicken.
  • Continue to cook over low heat for 10 or 12 minutes after it begins to thicken.
  • Turn off the heat and allow the mixture to cool to near room temperature.

Fill the tart shell

  • Add the strawberries to the baked tart shell, spread them out evenly.
  • Cover the strawberries with the orange glaze mixture.
  • Serve with a dollop of whipped cream.
