Basic Tart Shell

This is a fairly basic tart shell. I’ve had good luck using it with the orange glazed strawberry tart.

Basic Tart Pastry

This is a simple, buttery crust. It produces a crisp crust for tarts.
Course: Dessert

Ingredients

  • 1 cup all purpose flour
  • 1/4 teaspoon salt
  • 6 tablespoons butter cold, cut into small pieces
  • 1 egg yolk
  • 2 tablespoons cold water

Instructions

  • Using a medium sized bowl, mix the flour and salt.
  • Cut in the butter with a pastry blender until the mixture has the consistency of small peas.
  • Using a small bowl, whisk the water and egg yolk together
  • Add the water and egg mixture to the flour mixture and mix or blend until the dough can be pressed together and hold into a ball.
  • Form the pastry into a ball, wrap with plastic wrap and refrigerate for at least a half hour.
  • Roll the dough our and press it into the pie pan.
  • Bake according to your tart recipe or follow the baking directions below:

Baking

  • Preheat your oven to 425 ºF.
  • Prick the bottom with a fork.
  • Bake unfilled for 10 or 12 minutes.
