Spaetzle

Spaetzle is traditional German dumpling or pasta. It is first boiled in water or broth then sauted in butter and served as a side dish.

Ingredients
- 1 cup flour
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon ground white pepper
- 2 eggs
- 1/4 cup milk
- 1 tablespoon butter
- chopped parsley for garnish if desired
Instructions
Make the batter
- Using a medium bowl, mix the flour, nutmeg, salt and pepper together.
- Using a small bowl, beat the eggs well and mix in the milk.
- Add the egg mixture to the flour mixture and mix until smooth.
Press through a sieve and cook
- Heat a gallon of water to boiling.
- Using a rounded spoon, press the dough through a colander with 1/4 inch holes (or use a spaetzle maker or a grater with large holes). Press the dough into boiling water. This is the tricky part.
- After pressing the dough through the colander into boiling water, give it a couple of stirs to prevent it from clumping up.
- Cook about 5 minutes, until tender. The spaetzel should rise to the surface.
- Drain well.
Saute and serve
- Using a saute pan, heat the butter over medium low heat.
- Saute the spaetzle lightly in the butter.
- Garnish with fresh parsley if desired, and serve.
