Ingredients

  • 1 cup flour
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 2 eggs
  • 1/4 cup milk
  • 1 tablespoon butter
  • chopped parsley for garnish if desired

Instructions

Make the batter

  • Using a medium bowl, mix the flour, nutmeg, salt and pepper together.
  • Using a small bowl, beat the eggs well and mix in the milk.
  • Add the egg mixture to the flour mixture and mix until smooth.

Press through a sieve and cook

  • Heat a gallon of water to boiling.
  • Using a rounded spoon, press the dough through a colander with 1/4 inch holes (or use a spaetzle maker or a grater with large holes). Press the dough into boiling water. This is the tricky part.
  • After pressing the dough through the colander into boiling water, give it a couple of stirs to prevent it from clumping up.
  • Cook about 5 minutes, until tender. The spaetzel should rise to the surface.
  • Drain well.

Saute and serve

  • Using a saute pan, heat the butter over medium low heat.
  • Saute the spaetzle lightly in the butter.
  • Garnish with fresh parsley if desired, and serve.
