Using a medium bowl, mix the flour, nutmeg, salt and pepper together.
Using a small bowl, beat the eggs well and mix in the milk.
Add the egg mixture to the flour mixture and mix until smooth.
Press through a sieve and cook
Heat a gallon of water to boiling.
Using a rounded spoon, press the dough through a colander with 1/4 inch holes (or use a spaetzle maker or a grater with large holes). Press the dough into boiling water. This is the tricky part.
After pressing the dough through the colander into boiling water, give it a couple of stirs to prevent it from clumping up.
Cook about 5 minutes, until tender. The spaetzel should rise to the surface.
Drain well.
Saute and serve
Using a saute pan, heat the butter over medium low heat.
