Chicken and Broccoli Stir-fry

Ingredients

Sauce

  • 2/3 cup soy sauce
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoons red pepper flakes
  • 3 tablespoons water
  • 2 tablespoons cornstarch

Meat and Veg

  • 1 tablespoon olive oil
  • 3-4 skinless, boneless chicken breasts cut into bite sized pieces
  • 1 large onion sliced
  • 3 cups broccoli cut into florets

Instructions

Sauce

  • Using a medium bowl, mix the soy sauce, brown sugar, ginger, and red pepper flakes.  Stir until the sugar is dissolved into the soy sauce.
  • Using a small bowl, mix the water and cornstarch to make a paste or slurry.

Meat and Veg

  • Using a wok or a large skillet, heat the oil over medium-high heat.
  • Add the chicken and the onions to the wok or skillet and fry until the onions are tender and the chicken is cooke through and begins to brown.  About 5 minutes.
  • Add the broccoli and fry until it is hot and bright green.  About 5 minutes.
  • Move the chicken, onions, and broccoli to the sides of the wok or skillet. and pour the soy sauce mixture into the center.  Add the cornstarch mixture to the center and mix the it with the soy sauce mixture.
  • Mix the chicken, onions, and broccoli into the soy sauce mixture coating all the meat and veg.
  • Cook for another 5 minutes, until the sauce thickens.
  • Serve over hot rice.

Serve with rice to make an easy asian inspired stir-fry.
