Banana Walnut Bread

An easy way to make great banana bread from those over-ripe bananas.  This quick-bread is gone is less than a day at our home.

Banana Walnut Bread

Ingredients

  • 3 ripe bananas
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup walnuts coarsely chopped

Instructions

  • Preheat your oven to 350 ºF.
  • Lightly grease a loaf pan with olive oil or butter.
  • Using a large bowl, mash the bananas.
  • Beat two eggs and add them to the bananas and mix well.
  • Add the flour, baking soda, and salt to the banana mixture and mix well.
  • Stir the walnuts into the mixture.
  • Pour the mixture into a loaf pan and bake for 60 minutes.
  • When done, remove the loaf from the pan and cool it on a wire rack.
