Spaghetti with Meat Sauce

This is my favorite spaghetti recipe.  It makes a huge pot so there are lots of leftovers.

I use leftovers to make chicken parmesan, lasagna, and other dishes.

Spaghetti with Meat Sauce

Ingredients

  • 1 pound ground beef
  • 1 pound Italian sausage – sweet
  • 1 tablespoon cooking oil
  • 1 large onion – diced
  • 1 large green pepper – diced
  • 1 large red pepper – diced
  • 4 cloves garlic – minced
  • 2 large zucchini – grated
  • 2 teaspoons oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 pinch cayenne pepper
  • 2 28 oz cans crushed tomatoes
  • 1 14.5 oz can diced tomatoes
  • 1 12 oz can tomato paste
  • 1/4 cup sugar
  • pasta – based on the servings you want

Instructions

  • In a large dutch oven, cook the beef and Italian sausage over medium heat until well browned.  Transfer the meat to a large bowl and set aside.
  • Add cooking oil to the dutch oven and heat over medium heat.  Add the onion, green bell peppers, red bell peppers, and garlic.  Saute about 7 minutes or until the vegetables are tender.
  • Add the zucchini and saute another 3 to 5 minutes.
  • Add the meat back to the dutch oven.
  • Stir in the oregano, salt, black pepper and red pepper. and cook for 3 minutes.
  • Add the crushed tomatoes, diced tomatoes, tomato paste and sugar.  Stir thoroughly and bring to a boil.
  • Reduce the heat and simmer for an hour or two.
  • Cook pasta according to the package directions.  Drain the pasta.
  • Serve the sauce over the hot pasta.
