Smoked Salmon Pasta

When the fishing is good, we often smoke our salmon.  This recipe makes a nice pasta dish with the smoked salmon.  You can also use leftover cooked salmon instead.

Smoked Salmon Pasta

Course: Dinner, Main Dish

Ingredients

  • 16 oz penne pasta
  • 6 tablespoons butter
  • 1/2 cup onion -finely chopped
  • 1 clove garlic - minced
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 cup parmigiano-Reggiano cheese - grated
  • 1 15 oz can peas - drained
  • 1 small can mushrooms -drained
  • 10 oz smoked Salmon - cooked leftovers OK too

Instructions

  • Cook the pasta following the directions on the package while preparing the salmon, drain when done.
  • Using a large skillet, melt the butter over medium heat. Add the onion and saute until translucent. Add the garlic and cook for another minute
  • Sitr in the flour and cook for a minute, then gradually stir the milk in and heat to near boiling.
  • Gradually add the cheese to the mixture and stir until smooth.
  • Add the peas and mushrooms and simmer over low heat for 5 minutes.
  • Add the salmon to the skillet, coat with the sauce and cook for 2 minutes.
  • Serve over pasta.
