Sorrel Sauce

We got a sorrel plant at our spring neighborhood plant exchange.  A neighbor suggested sorrel sauce for fresh caught red salmon and it was a hit.

This sauce is great with grilled salmon.  It is also used in our Pecan Crusted Salmon with Sorrel Sauce

Ingredients

  • 1/2 cup fresh sorrel
  • 2 tablespoons dry white wine
  • 1 tablespoon minced shallots
  • 1 cup whipping cream
  • 2 teaspoons lemon juice
  • salt and pepper to taste

Instructions

  • Heat wine in a small heavy saucepan over medium heat.
  • Add shallots and stir for a minute or two, then add sorrel and stir until the sorrel wilts.
  • Add cream and lime juice, raise to a boil.
  • Reduce to a high simmer, then simmer until the liquid is reduced to sauce consistency, about 15 or 20 minutes.
  • Transfer sauce to a small blender and puree until roughly smooth. You can use an immersion blender for this step.
