Our little cherry tree had just enough cherries for a half of a pie, so we made 2 mini pies instead!<\/p>\n\n\n\n

Mini Cherry Pies<\/h2>\n

Ingredients<\/h3>
  • 1<\/span> pastry dough for a 9-inch single crust pie<\/span><\/li>
  • 1\/2<\/span> cup<\/span> sugar<\/span><\/li>
  • 1<\/span> tablespoons<\/span> flour<\/span><\/li>
  • 1\/4<\/span> teaspoon<\/span> salt<\/span><\/li>
  • 2<\/span> cups<\/span> fresh sour cherries pitted!<\/span><\/li><\/ul><\/div><\/div>\n

    Instructions<\/h3>
    • Preheat the oven to 425 \u00baF.<\/span><\/div><\/li>
    • Split the pastry dough in half and roll out two circles.  Wide enough to fill a 5 inch crock and leave about 2 inches around the sides.<\/span><\/div><\/li>
    • Line 2 5 inch crocks with the pastry dough.<\/span><\/div><\/li>
    • Using a large bowl, mix the sugar, flour, and salt.<\/div><\/li>
    • Pit the cherries.<\/div><\/li>
    • Add the cherries to the bowl with the sugar mixture and toss well to coat all of the cherries.<\/div><\/li>
    • Put the half of cherry mixture into each of the 5 inch crocks.<\/span><\/div><\/li>
    • Bring  the sides together and pinch them at the top of the pie. Poke holes into the top with a fork (or make small slits with a knife)<\/span><\/div><\/li>
    • Put the pie into the 425 \u00baF oven and bake for 10 minutes.<\/span><\/div><\/li>
    • Lower the heat to 350 \u00baF and bake for another 30 or 40 minutes. When done the crust will be a light golden brown.<\/span><\/div><\/li><\/ul><\/div><\/div>\n
