The recipe also makes excellent <a href=\"https:\/\/www.kaylasdoghouse.com\/kitchen\/2020\/10\/03\/deep-dish-cast-iron-skillet-pizza\/\" data-type=\"post\" data-id=\"1949\">pizza<\/a> dough (enough for 4 pizzas) and it makes good <a href=\"https:\/\/www.kaylasdoghouse.com\/kitchen\/2020\/11\/06\/sourdough-potato-focaccia\/\" data-type=\"post\" data-id=\"2532\">focaccia<\/a> too.<\/p>\n\n\n\n<p>This is very similar to our  <a href=\"https:\/\/www.kaylasdoghouse.com\/kitchen\/2020\/10\/02\/rustic-sourdough-bread\/\" data-type=\"post\" data-id=\"1966\">Rustic Sourdough Bread<\/a> recipe, the only change is the amounts and types of flour used for the dough. Some dutch ovens, like the Le Creuset that I own, have black phenolic knobs. Flouring the towel with a 50\/50 mixture of rice flour and whole wheat flour worked most of the time, but it did sometimes stick to the loaf. Because this recipe involves turning out the dough into 500 \u00baF pans, even the occasional sticking results in cussing.<\/p>\n\n\n\n<p id=\"block-c3f881d7-6cbb-49d9-aedf-0500ab54b42a\">I now use a 9-inch diameter banneton (proofing basket). Some of these come with a linen liner, but I don&#8217;t use it.
